Well, it seems like this Guardian og:image not loading issue has stalled again and dropped off the radar of the #Mastodon devs. I've put a fix in, but now it seems to have been pushed down to page 2 on the Issues and Pull Request lists. If anyone wants their links to The Guardian to load preview images on their Mastodon instance, can you please go to this GitHub Issue and leave a comment that you want this fixed so that the moderators know to actually make it a priority?
